Culinary Students Learn the Value of Mushrooms with Help from Mushroom Matrix Parent Company

Students from the prestigious Culinary Institute of America in Hyde Park, New York, have learned the value of mushrooms in cooking and health during two special "mushroom" lunches held at Epazote Oceanside Steakhouse Restaurant in Del Mar, California.

The lunches were prepared by Epazote Executive Chef Justin Hoehn. In addition to featuring King Trumpet, Maitake and Brown and White Beech mushrooms from Golden Gourmet Mushrooms, producer of Mushroom Matrix nutritional supplements, the lunch also featured award-winning wines from the Matrix's own Dr. Mushroom, a.k.a. Dr. Marvin Hausman. Dr. Hausman and his wife, Deborah, own Quailhurst Vineyard Estate in Oregon.

Twice this year, Culinary Institute students have had this unique opportunity to enjoy a meal of mushrooms and fine wine. One group was hosted in February and a second group this June. Each time, the meal was preceded by a presentation by Golden Gourmet's Steve Farrar on the "Kingdom of the Mushroom." The presentation gave students a quick course in such topics as mushroom biology, cultivation techniques, classifications of edible mushrooms, mushroom consumption statistics and patterns, mushroom nutrition facts, mushroom promotion strategies, use of mushrooms as a main dish or meat substitute and the health benefits of medicinal mushrooms.

Mushrooms are gaining in popularity as one of nature's "super foods." High in antioxidants, beta-glucans and polysaccharides, mushrooms are a perfect food and are increasingly turning up on restaurant menus. Through these links with Culinary Institute students, Golden Gourmet is working to help the next generation of chefs understand not only that the wonderful flavors of mushrooms can enhance many dishes but they also add a healthy dose of nutrition to any meal.
